Although it's the same story, enemies will be harder. Sometimes you keep your gear and levels, and sometimes you get new gear and items only available in the NG+.
Some games let you repeat the story several times, with increased difficulty. Darksiders 3, for example, lets you repeat it 9 times, so you have NG+1, NG+2... NG+9.
Some games have different names for the new game +.
In Nioh, for example, the first time you play it, the difficulty level is called "Way of the samurai, the NG+ is called "Way of the strong"... and it goes up to NG++++ which is called "Way of the Nioh".
In order to start the NG+, it's important that you have the save of your final mission.
If you uninstall the game after you complete it, and delete your last save (local and cloud), the game won't be able to reload your progress, and the only option available will be the regular New Game. 👍🏽
The game will give you the option to start over in NG+ once you reach that point, but you can still keep playing on your regular game mode first if you'd like to before starting again with all of your obtained gear before entering NG+ mode.
Otherwise you will be at a huge disadvantage starting that mode with your current armor, weapon upgrades, etc. and ESPECIALLY if you intend to play on a higher difficulty settings ("Give Me a Challenge" or "Give Me God of War" modes namely) going into NG+ where basically every enemy is going to be stronger than they were in the first playthrough (regardless of which difficulty setting you're on, NG+ will buff them and even the bosses so they will be much harder to defeat, so finding all of the best gear possible is super important).
Fighting all the valkyries and obtaining their armor set and upgrade materials for instance, would be extremely beneficial before entering NG+ mode. There's other things too like doing all the trials in Muspelheim and treasure hunting in Niflheim as well.
