You can workaround this by using DS4Windows (ryochan7's version) and, on it, configure a profile that emulates a DS4 controller. DS4Windows' virtual DS4 controller appears as if it were connected via USB regardless if you real controller is connected via Bluetooth, so the game will recognize it then.
Unfortunately, there is currently an issue with the game that can cause unintended controller inputs when using the controller "natively" as a DS4/DualSense. This issue usually does not occur when the controller is connected via USB but can very easily occur if using the controller wirelessly.
if you really want to play wirelessly I advice you on emulating a Xbox 360 controller, either via DS4Windows or by enabling Steam's Playstation Configuration Support. You will start seeing the Xbox' button icons, but at least you won't suffer from the issue I was talking about. Nothing else that can be done until they fix this game issue.

Steam Playstation Configuration support is Steam Input, and it is basically doing Xbox 360 emulation for you in this case.
