I'd personally say 8089 is a bit more simplified, while still having rough difficulty curve. 8089 was also made with VR priority, which ended up making some mechanics feel a bit weird for non-vr users.
Gameplay wise tho, id say both games are great. Im biased towards 8089 as I tested every early build of it before release, but its not a direct sequel or remake of any previous games, so its not like 50-series games are just outdated or superseded by existence of 8089. Whole bunch of players would still say 5089 is better than 8089 and its valid- people have different preferences :D
