How are your mines running?
The game tells you, more tracks = bigger mine, more output.

So I own two mines.

Mine 1 contains of 10 tiles including start and end tile.
Mine 2 contains of 32 tiles including start and end tile.

Mine 1 produces gold, gemstones and all sorts of stuff. Often up to 10 items.
Mine 2 produces each turn only 3 items, first time 3x silver ore, second time 3x copper, third time 3x stone

Mine 1 is pretty fast, mine 2 takes ages for the cart to move the long track back and forth.

It seems like, the game is punishing a too big mine?

Edit: One important tipp, you can pay in advance. Like paying 5 cakes and the mine will work full 5 cycles.

Well that's interesting. My mine's 19 long, start to end, and I just get the 3x crap. I thought it was pointless, but it sounds like it's just bugged.
...
I cut it into a 10 and a 9 segment, and still only get 3 items at a time. The first one just gave me gold, but that might be because I recently unlocked it.

They always give 3. No matter the lenght.

I just had sometimes more, because you can stack the orders. They then run while you are away.

The 32 tile mine makes no sense at all, it runs way too slow.

The sweet spot for gold, silver and rubys, seems to be between 6 to 10 tiles.

But, you can ignore the mines completely, there is no reason to use them.
I finished the game and you find a long the story each and every resource more than enough.

I got 2 mines
(I always used the cake)

Mine 1 contains of 2 tiles including start and end tile.
Start tile is next to stop tile
-> 1 Ruby, 3Tin + Coal,

Mine 2 contains of 45 tiles including start and end tile.
Start tile is diagonally away from stop tile
-> 3 Iron, 3 coal,

I made one mine, 11 tiles long. All I get is copper, coal, rock even feeding the better food to the miners. A complete waste of time.

Update: on making a second mine track, the example rocks next to the miner you pay have changed to include silver and gold for both tracks and I finally got two silver ore.

I theorise that the total number of tracks laid may be the factor, not number of tracks in the individual run. My first track of 11 segments (counting start and finish tiles) hadn't changed at all but is now producing ores it didn't before.

Silver and Gold unlocked for me, when I randomly looted them out of a chest and a barrel. I had the 32 tile mine without gold and silver and found them after building the mine, which unlocked it.
