Hiring new workers is a joke
I paid 15 gold to see the stats 2 points into mining. Dude comes with base debuff that doesnt allow him to mine... WTF 335 gold basically lost. Cant reload to previous save because it autosaves every 5 days. It feels like there is a lot of scenarios in this game where the best way to go about progressing is to save do something check if I like it or not just so i dont waste time.

On the topic of workers Monty refuses to get 3rd trait, while the main guys gets god fearing on almost every playthrough (Why does he fear god especially since I have good relations with church).

Hey there! What debuff are you talking about? Is it arachnophobia? If this is the case, then it doesn't really prevent the worker from mining. For instance, Stone (the English apprentice) comes with this debuff as well, but he is an exceptional miner thanks to "strong" trait and 2 points in mining as well.

Speaking of Stone, he quit the job and I wasn't sure why except I had good relations with France and bad relations with England. Would that cause Stone to leave?

Yes, Stone leaves at some point in the story if you helped French to defend the province. Therys, on the other hand, would leave if you picked him and sided with Englishmen. And only Monty doesn't care who you make orders for.

I tend to agree hiring is not good. There are 2 issues one is bad one is good but it is a bug :)
The good is that if you save and reload you will have a new list of workers, so if you don't like the available choice you can refresh for free :) (but probably it should be fixed)

The bad issue is that you can pay to check worker skills, honestly, I don't care about skills but hiring someone blind without ANY ability to check traits is a bummer. I save scamming to hire someone without negative traits.
