Dealing no damage and getting killed in 2 hits
I am at a complete loss with this game, which enemies to fight and which not.
I need to bring meat for a quest, yet when I attack a boar its healthbar doesn't even move.
What the actual heck is this games logic for placing enemies that die in 3 hits next to enemies that are literally immortal right next to each other in the starting areas?

I've just started playing, but I've not had this problem. I think it would be easy to travel too far and get in over your head. If you hang around the woodcutter camp and concentrate on clearing the entire area of all secrets, explore, and talk to people and do their requests, you should be doing pretty good. I have some upgrade weapons, first armor and almost level 4 and have not died yet, though it was close once. Mainly getting used to the controls and game mechanics. Taking my time. Only had some rippers, some spriggas and some small mosquitoes.

Boars are hard enemies. You could use your talent points to increase your dmg. Decide which weapon u want play, search the teacher and there u go. Also put talents into Str if u want deal more dmg. ALSO a good equipment is important. You cannot do huge dmg with small wooden stick if u know what i mean. If some monsters are too strong for u at this moment u are just run of them untill u get stronger. Invest your talent points into learning skinning/ taking guts to profit. Sell animals goods to merchants and buy a better weapon OR as i did you can explore with low dmg character and get good weapon from other sources like chests, hidden treasures, bandits, ruins etc. but this is hard if u dealing low dmg. If u are not masohist as me (killing bear in act 1, lvl 6 with worst daggers cause i love to explore and hate losing XD) you could run from hard enemies and back when u are ready for them. I can literally not step off the road because anything but gnats and those scruffy gigantic rat like things are an end boss for me.
I explored everything as far as I could without dying.
Now I need to step out for quests and it is suicide.

First levels you stick to those swamp wasps, rats and rodents hehehe, thats the Gothic experience for you, because next to those enemies could be a boar or even a cave with a very tough enemy, key here is to save often and if you die easily, or take a lot of damage and run, you are not supposed to be there yet.

Now, you can kill a lot of tough enemies with the spells, i cleared the dog cave near the camp using blaze, died a lot trying to get those bastards together so the only scroll i had could wipe them all out at once.

Do quests at the camp, kill easy enemies, the scruffy dog is easier than the not scruffy one, until you can get a good weapon its gonna be tough and dont be afraid to run away, i know i did.

I cleared the camp, the gear is trash tier still.
I am at the Remnant camp now and can't progress.

Welcome to the Gothic experience. Gothic and Drova try to build an immersive world, where it's important to know what kind of enemies you can mess with and which ones you should avoid. Also, it requires thinking, like attacking the enemy you want to kill with a ranged weapon to lure it away from the monster that is to strong for you.

Also you should think about using traps to face the stronger monster. They help alot. And if that doesn't help: Ignore the quest for a while, try to get better equipment and come back later. Missions are not time based in this game.

The main quest will only progress after you join a faction, i tried to explore almost everything before that, because after you join one side the other will close up, so dont join yet.
There are a lot of quests in the ruin camp and on Nemeton, nemeton farm too, so go there, there is a woman who wants to go there too, shes in the remnant camp bar i think.
