Enemies?
So I imagine human enemies you fight don't respawn, but what about animals? Will no new ones ever appear, so if you squander resources - you are SOL?

there is no respawn of either BUT some new enemies spawn each chapter and you'll have enough of em to become OP even in chapter 1 (if you are hardcore enough :D). They even visually decay over time and never despawn from the world and you can retroactively skin/gut em etc.

Don't worry - unless you rely on cheese too much (like solving harder encounters by solely spamming traps) you won't run out of money or resources. Stay calm, don't panic (aka slurping instaheals nonstop), every enemy type has a weakness or two which can be exploited - strategy is as important as twitch reflexes. For example - you face a fast dodgy character that overwhelms you with ceaseless storm of attacks - equip a shield, (preferably) a spear, and use the "Charge" talent - it instantly hits like a truck and if you combine it with heavy spear attack (hold LMB) you can perform 2 fast blinks doing heavy damage, bleed and poison (slow) the enemy and block/dodge inbetween, spear is also good for maintaining stamina with the right talents, so you can kite/block/dodge and heavy attack / Charge when the moment is right - makes you almost invincible if you can keep your head cool.
You can drag the same weapon on both primary and secondary loadout slots and assign a shield to one of them (or a sling), I'd also suggest reassigning most of the controls to be closer to WASD because your reflexes define how good you are in a twitch combat - that way you can turn the shield on/off depending on the enemy you face - some enemies are way easier to down using just dodges and secondary spear attack (RMB when offhand is empty)...
Add some magic on top for guaranteed victory - it's so busted it feels more like cheating when you finally get it tbh (so use those scrolls early on if you feel like it, I just sold em all for more cash :P)

While it is *in theory* possible to run out of resources, it will absolutely never happen in a normal 40h playtrough.

I can imagine it happening for people cranking the difficulty to the absolute max and going the archery/slings/traps only way but yeah
