Report a translation problem
Some enemies, most notably big ones and armored NPCs, are just really strong endgame enemies. They have high armor and hit like a truck. This is fine, if you could easily beat them at level 1 with a branch, they wouldn't have survived this long. Either come back later to beat them or use spell scrolls/traps. No enemy is just randomly OP, it's just the player needs more gear and experience to beat them. Also, armor has a massive impact. High armor makes previous 1-shot attacks merely tickle you if you upgrade. So if you hit an enemy and the hp bar doesn't move, it's armor just severely outclasses you attack. Get stronger (strength increases your dmg % flat) and come back later. Get the game, it's good and fair.
Many open world games let you wander into areas that are way too difficult for you.
This can be a win if you are good because sometimes you can sneak in and loot some higher tier gear early game if you know what you are doing but it can be bad for a newbie.
I would imagine this is a case of someone just poking content they are not ready for. There are a lot of areas and enemies that are pretty easy to kill at all level ranges and it's just a case of finding them. That's certainly not always easy in this game.
Some games have maps that show the level ranges of enemies on their wikis or guides for it at least but I have not looked if this one does.
Huh, this is interesting because I've just made it to the remnant camp and i'm level two. The enemies i can kill(not many) don't give any xp, and the others just wipe me out. Not sure what else I'm missing.
Edit: Ok I did some searching around the woodcutter's camp like you suggested and found some things to do, also i guess i hadn't 100% some of the quests in the camp. When I finished those off I gained a couple of levels.

But what makes me endure are the other aspects of the game.
Many "skills" are not attached to focus. For example, we can't perform a perfect block and parry until we learn it from a trainer. Like in Gothic, our character starts the game literally not knowing how to properly hold a sword. We're told to stay on the main road in the beginning for a reason.
When we learn more from trainers, we get better combos and more skills at our disposable separate from abilities requiring focus.
Too many better games to bother with this ♥♥♥♥.
I did 5 playthroughs: classicx2, insane, ironman and hardcore, killed all the bears everytime and not once have I been cornered by a bear that lead to my death.
Impressive.

You played the game. You didn’t play in every scenario.
The story didn’t hold my interest to want to continue. Otherwise I would have endured the terrible combat.
Did you really play soulsgames? Because in every one of those the enemy has no stamina bar, same thing here, no focus for enemies, they attack in paterns, learn the movesets or die, thats it, combat is Gothic influenced but this is similar to souls, git gud is just knowning your enemy.
