It's very useful for rare or powerful and unique souls (you can loot some npc unique souls after certain quests), so that even if the unit dies, you can just craft it back (it'll still be lv1 though).
How can I know which souls does an enemy unit have?
Tier 2 mole for ex will give you a tier 2 soul that increases your hp by 20. Smaller elementals or caster of tier 1 or 2 will give you souls that generate mana or allfire every turn for ex. Dwarves will give you gold or frenzy souls.
Tier 3 casters like dwarf shaman will give tier 3 souls that if your unit dies it will resurrect at end if you won the battle.
Tier 3 thing like battle trolls or draugr giants will give souls that give 50% life leech
Tier 3 soul from a wendigo demon seems to be a tormented soul without any special bonuses. Not sure how many more different souls is there. And ofc you will get unique souls through quests that give more than one bonus.
