Basically;
Look at the Class Tree and click on the various classes. Take note of the Mastery Requirements. This determines what class you become.
Now a wall of text where i try to explain in my own clumsy way how the class system works:-
Lets look at Eden and his special Overlord Class.
You will see that for Eden to eventually become an Overlord he needs Mastery in Sword-8, Plated Armor-8 and Elemental Magic-3.
He starts off in the game as a Commoner and will max that Class when he gets 300 exp.
He will then automatically get the option to change to a Squire when he has the Recommended Equipment requirement of a Sword-3 and Plated Armor-2, and these just happen to be the default equipment Eden has when starting the game.
Note also that each class has a character level requirement - for example to become a Knight your character must be at least level 10.
He does not get the option of being a Fighter or a Mage as he does not meet the requirement of Leather Armor-2 or Cloth Armor-2 and Elemental Magic-3.
You could however give him those requirements at any time if you wanted to change his class, because it's the equipment requirements that govern what class you make the character.
Once you understand this you can see how to pre-plan your characters build.
In your case right now you go into the Class screen and you should see Eden with Commoner maxed out and Squire available to select. So click on Squire and he is now a Squire.
If you want to next change to a Knight you must meet the Mastery Requirements of Sword-6 Plated Armor-4 for a Knight. It is also worth considering to max out the Squire class if you want to keep the Red skill - Tactical Link:Swap. (Red skills are the only ones that remain with a character upon class changes).
Now if you eventually want Eden to become an Overlord you will at some stage need to get Elemental Magic up to level 3. To do this you need to equip an Elemental Grimoire. Which means you have to unequip your sword/shield/bow as these cannot be used with a Grimoire.
You will also have to reselect Eden to become a Commoner Class once again as that is the only class he can be to equip the Grimoire. Once he has those 3 levels of Elemental Magic you can reassign his class back to a Knight.
Class changes cost nothing and can be done at anytime in Camp.
You can get Eden to class 3 in Elemental Magic by taking him into battle as a magic caster.
Other characters may also be trained at the Master of Arms.

Example : marchelle can be bishop or sorcerer, but i only played her as a priest until now (level 22 right now). Should i change my class to mage so i can get extra skill points or should i stay as priest and get a dark grimoire ? (thank you tutorial, who's really not accurate).
(there is no xp buff really the only real "buff" would be fact as you hopefully noticed is you get training slots for your companions and personal training in camp).
Every class has a level requirement, also a weapon/armor mastery level requirement. However, it also has a chapter requirement. So right after jail break, your are just ending chapter 3. If you look at the next tier of classes above them, it states will not unlock until chapter 4. This is why you can't select another class yet, even though your level and other requirements are met for the squire as example by chapter 3.
This first camp, is a good time to really look over your characters and equipment/stats to see how you want to build them out down the road in later chapters. For the most part the game defaults the initial set of characters pretty good to their natural role for you though.
