+1 I would rebuy this for my switch so fast if it got a port
with option to disable crossplay
I guess if the PC version sells good enough.

Porting and releasing the game on consoles costs money.

PC is the only format where you technically can release a game without any costs (although online distributions like Steam, GoG and Epic do take a considerable cut of the sales).
I'm worried about the Switch port but is Unity a RAM heavy engine?

Well, Doom 2016 ran pretty well on it but maybe it's because of the engine.

Depends on the game imo.

Unity was popular with indie devs but lost some clients because of the "per download" charge (I don't know if it was removed or not).

I think Switch (whether 1 or 2) would be a good choice. The old Rare FPS's for N64 were obviously Nintendo 64 exclusives, so you'd be highly likely to find a receptive audience on modern Nintendo consoles.

Porting to Xbox would just be to give the player base some mercy since Microsoft killed the planned Perfect Dark reboot game (and it looked decent enough).

The reboot looked meh and barely had the coolness of the original.
