This can change depending on a few different things.
The basic rule of thumb is longer routes are usually better.

There is a big interest for many players to trade in food, particularly specialty food. This is because there are two major trends that buy food at a significant markup, and they're relatively common.

So if you're actively playing, you can grab Pickled Herring from Amsterdam (North Sea) and ship it to the Caribbean or Mediterranean at a Festival or Flood event. From the Mediterranean you can pick up Pasta from Naples or Syracuse. And from the Caribbean you can grab Cactus from Veracruz.

This lets you start from any of these points, sail to a mid point, check for trends, then go to that trend. Then pick up the new food and repeat.

If you're not interested in chasing trends, I would pick up some pricey specialty items and just go as far as possible. The seasons can change how much of an item is available, which may have you adjust your strategy over time.

from the west- Pineapple, Vanilla, Tobacco, Tequila, Opal, Topaz and Silver all sell well in the east. Allspice, chickle and those club weapons don't do bad either. Gold and diamonds from South Africa still probably better though.

Northern europe alcohol to almost anywhere, except islamic countries. One of the best early routes is alcohol to west africa and gold and diamonds back to europe.

European Firearms to Asia, Asian Gold/Silver to Europe.
