If you are into those types of boardgames I feel confident you will probably like to return after you finished it, but if those types of challenges/puzzles are something you don't feel the need to revisit you might want to wait.
I still can't say for sure because the game is not out, but based on my experience with the demo I don't think it's going to be too far off.
Seriously, I'll rephrase if it helps: my dilemma is whether I should buy the game on Steam or if buying one or two months of Game Pass is enough to explore what this game has to offer. Because, if it's not obvious, it could be a worse deal to play it through Game Pass if the devs release major content updates over a long period. Take note that Blue Prince has some roguelite elements and these games tend to be updated...
