Question : what games are included here from Nintendo?
And I don't mean the system, I mean made by.
I'm really unsure of how emulation is handled for publishers and whatnot, but this seems a bit bizare that I could play these games for free, when say ; capcom regularly releases roms to steam for purchase.

So I was just wondering if there's a list of games I can check, and also what the protocol is for if and when a game has to be removed.

Currently in their non-Steam Windows 7+ version that can be downloaded from their website. The NES games available are Boulder Dash, Star Wars, and The Empire Strikes Back & the SNES games available are Earthworm Jim, Super Star Wars, Super The Empire Strikes back, and Super Return of the Jedi.

Their library is mainly made up of classic arcade games, and old school computer games. Such as the Commodore 64, Commodore Amiga, and ZX Spectrum. Other than that console wise they have some Genesis and Atari games as well. There is currently only 1181 games in the library and as I said already they're mainly classic arcade games and old school computer games.

You can only play games that Antstream has the license to put on this service. Nintendo has not licensed any of their own games to Antstream, so the answer is 0.

Edit: Might mention that it is highly unlikely that Nintendo will ever license any of their games to Antstream, or anyone else for that matter...

good one if you think Nintendo would put their games on this system and not sell them out right

You will typically never see a Nintendo made game outside their own ecosystem; unless they stop making consoles some day.

If they release something outside their own store, such as on Android/iPhone app store, it would always be their in-house developed software. Something like their retro collections on Nintendo Switch might appear some day somewhere, for a sub fee.
