Does Goliath Tigerfish Respawn?

My goliath tigerfish got stolen by an insanity shark attack before I could get back to the traveling fisherman. I don't mind having lost a fish overboard, that's part of the game (and I LOVE this game!!). But I've been back to the two spots mentioned in walkthrough articles as where goliath tigerfishes spawn, at both daytime and night, and they haven't reappeared for 5 in-game days.
Have I lost out on the chance to complete the rare fish quest, with this save?

BTW I absolutely would have just reloaded my save but the shark attacked just before I docked and I was rushing to dock to avoid him -- so before I fully realized the fish was gone I'd docked and overwritten my save.

Unfortunately, the rare fish do not respawn. However, all the traveling merchant wants is to know you found it. Once it's recorded in your encyclopedia, you can still turn it in.
