Good to know it isn't JUST because I suck.
I know this isn't helpful, but just to provide another data point: I hit "obstacles" the first time I encountered the dredging minigame, and then never again in my 27h playthrough. Not a single time, even though my aged 50+ year-old reflexes certainly aren't what they used to be (and let's not talk about my eyesight). The dredging minigame felt extremely easy to me, just like most of the fishing minigames. I wonder if you might be encountering a bug?
It isn't all of the time, but it is some of the time which is more than enough for me to just not like it since all of the others I have zero issue with.
Oh well, this is enough feedback for me to know I am just going to have to deal.
