Fishing speed?
What exactly does this influence? It doesn't seem to affect the time that passes while fishing, and in reeling speed I'm not sure if I can tell the difference between 250% and 500% speed.

It affects passive reeling-in speed, I believe. And yes, the impact is not dramatic.

It affects how much the winding Guage will decrease once successfully bitten. The winding speed itself at other time will not change.

It influences how much you pull up a fish with each successful hit on the mini-game. If you have a lot of fishing speed you can pull up most fish with two or even just one hit.

Starting a new save, I definitely notice it a lot more, going from low % to higher. But the difference between 300% and 600% is almost negligible in most scenarios, which was a little surprising.

Is it even worth going over 226% fishing speed compared to saving space for fish? I can catch every fish type as is. Would say an extra 55% be worth it?

Well, first off it is quite satisfying being able to pull up fish with one or at most two hits on the minigame. The cargo space you spend on achieving 600% may cost you the space for 2 or 3 smaller fish. But you save so much time on the fishing that you can instead make more trips in the same amount of time. Which should more than compensate for the lost cargo space.
