Note that time only advances when you're moving, fishing, or doing certain actions like installing equipment. (With some games, I'll sometimes fidget with the controller and wiggle the character around while I'm pondering what to do next, but don't do that with your boat in this game.)
You start out SO SLOW, so definitely want to improve your engines. Note that you can have multiple mismatched engines installed, as long as you can cram them all into the engine squares.
Totally valid to explore in the morning, fish in the evening, spend the night at some dock that tragically lacks a fishmonger, and then go sell the fish in the morning. They'll usually keep "fresh" status over night if you caught them late in the daytime.
Every major region has a person who will buy fish, so you don't have to go all the way back to Greater Marrow every time.
Not a lot of point in pushing it if you are pretty much guaranteed to take some damage that may cost you the most expensive fish you caught (especially since the larger fishes tend to be the more expensive ones so a slightly higher chance that the random inventory spot that gets removed hits one of the bigger fish...or an engine that slows you down even more). If you aren't all that crazy though, you can usually pretty safely get to the nearest applicable dock if you just keep your lights off (lights attract the angler boats, and cause the haze to become hostile and drive you insane), you just have to be careful about the rocks hat can pop up in front of you as you do lose your mind.
I also have a tendency of leaving docks at around 4am if i plan a long fishing day. It's still technically night, but the anglers have despawned, i can see pretty clearly, and it gives me a bit of extra time to reach the fishing spots I wanted to go for before nightfall has returned. Plus your panic does reduce during the daytime so even if you are slightly crazy, it's not the biggest deal if you head out at 4am...assuming you also aren't completely sleep deprived.
And the rot speed I don't mind too much. In general, something I catch in the early morning will start to go stale by evening, and that's fine enough for me. Money isn't too hard to come by so it isn't a big deal if the morning catch goes stale by the time I sell it, though I do like to get back and sell quicker if I have an especially valuable fish.
Ultimately, this game feels rushed, and that doesn't make sense for a fishing experience.

As others pointed out, you can operate at night. It's just more dangerous. It's good to have upgraded lights.
