I fished some fish, and a mere few hours later it turned into infected fish

Also, what's the use for the horn ? Doesn't seems to do anything against the ghost ships

It has a few uses. Some of them are helpful, some of them are not :)

The infected fish sell for less money than healthy fish,
It's the night time equivalent to seagulls stealing your fish during the day.
Throw them overboard, or you risk the infection spreading to your other healthy fish.

After some experimentation, they only notice you if you are moving or have a light on. Honking the horn just gets their attention. If you stay still long enough they descend and you are safe to move.
