What does the pasture do?
I've completely forgotten...or maybe it was never properly explained? What does the pasture DO? I put my horses out to pasture when I've finished tending them for the day and I'm not actively training them, but what does it DO? Do they feed from the pasture? Does it raise care? Trust?

Horses in the pasture overnight do not need to be fed and will get far less dirty (only need brushing every 4-5 days instead of every day.) On the flip side, running around in the pasture will mean they start the day with only 75% energy and adult horses who have potential left will loose one point per night.

Now- I do always make sure a horse's stall is clean before sending them out to pasture and obviously it stays clean while they aren't in it. I don't know if a dirty stall would negatively effect them overnight while out in the pasture like it would if they were standing in it.

if the stalls are all filled can you still have horses out in the pasture? or will it freak out the stable is full? <-- means the game will error out, or force you to sell?

why i ask i have 4 stalls and all my female horses have foals

You can't have more horses than you have stalls, even if they are in the pasture.
The exception being foals, who share their stall with their mother.
As soon as the foal grows into a young adult, you need to have a stall available for it, or you won't be able to do anything with the horse.
The game won't freak out, though. It will just ask you to assign a stall for your horse when you check the horse stats.

Yes, you can't sell foals, period. You'll have to wait until they grow into young adults.

In addition to selling a yearling without assigning them a stall, the game will also let you sell the yearling's mother and then auto assign the yearling to mom's stall.
