I am going max speed 380 kph and this bot dude is going like 430. What is this?

That's the point of unbeatable difficulty. At this difficulty u should've best tuning and make no mistakes to defeat bots.
Usualy the easiest way to win the race is on start - u need car that capable to accelerate on the start so u can get to 1st place in the beggining. Then u just need to make no mistakes on the corners and u will be fine. If ur car cannot overrun bots in the begginning u r probably can't win this race at all.

The higher you crank up the difficulty, the cheatier AI will get.

Like Tomvs stated, your best bet is to get a tune with high acceleration.

The AI's most notable weakness is sharp turns. If you can knock AI cars aside and get ahead after arriving at your first or second sharp turn (ideally the first one of course), it is almost impossible for you lose the race.

You also have the option to use rewinds if you do make a mistake.

They also get harder with car classes. Doing the Gauntlet on X class unbeatable is a whole workout routine.
Also, it's normal for them to catch up on long straight roads. It's on turns and starting acceleration where you usually beat them.

How can I win a race? I am driving perfectly and this AI is going much much faster. It's not like it's hard, it's impossible on few tracks. For example unbeatable on drag race is impossible to win with fastest drag car in the game and good build of course.

If bots faster then u it means that ur car is not fastest in it's class or ur cars tuning is just bad.
Car and its tuning is very important in drag races against ai. As i and other people said - the only way to outrun ai - on corners, u need to cut the corner while ai always will go with perfect trajectory.
Drag race = some bad ass drag car with bad ass tuning and don't forget to use manual gearbox with clutch in ur settings. Turn off all the helpers - they r slowing u down.
If u feel that u cannot win the race the only way i see - low down the difficulty till u get more expirienced in the game and tuning or do it just to actualy have fun in the game. If max dif frustrating u why bother? FH 5 AI so stupid, cheated and predictible that it's not even interesting to deal with it. It's ok not to be able to win them bro)

I dont play on Unbeatable purely because its not consistant. I have done the Goliath 3x times back to back, same car with the same tune. 2 races I came second by about 4 seconds, 3rd race I won by 20 seconds. There are certain spots on each track where the AI noticibly speed up or slow down due to rubberbanding. I hope FH6 is better.

That is because the game has a chance to add a super runner to each individual race on the highest difficulties. Sometimes it won't, but sometimes you will definitely see one particular car cheating it out a lot harder than the rest.
