Tires grip differently when racing other players.
I test my cars on tracks against the avatars before racing real players. This season in every race the tire grip is way different while racing real players. The cars are sliding off the road, past checkpoints, and turns. I even checked the cars after the real player races are done and they race fine. Is anyone else having this problem?

Grip levels depends on the time of day and weather because of the ambient temperature and humidity Also, usually tires are cold at the start of the race. Other than that, grip levels are the same across all game modes.
I noticed the difference in a big way after they updated the game for PS5 players to purchase it at the end of April. I'm getting shorted in drifting and wreckage as well. Example: Hitting 2 or 3 billboards and only getting credit for hitting 1 of them. The points just are not always rolling like they should. It's terrible on my end.

there is also that when i play with me Eu friends my rwd drg lambo evo does wheelie launch 10/10 times super easy. but when i play with my us timezone friends i literly have to extend my first gear 2-4 steps longer and it does wheelie but not even remotly as good as on eu.. nothing changed from going eu to us convoy. time of days the same and all that. it really feels like going from standard steering to simulation streeing that makes many cars have a real hard time wheeling if you just useing manual and launch control no clutch.
This season the races seems better than last. I got bumped into some passing cars, and lost it in some curves missing check points in one race this season, but caught back up to the lead before the end of the race. Apparently other people must be having problems too as their dots on the map kept showing up behind me. Drift run points and smacking objects still are not showing in the points counter - it takes a lot more effort to get the same points i was getting before the update.

Hmm....
I wonder if ping could have something to do with it? Mainly said, since we're connecting with other players in modes like Horizon Open, trials, etc.

It shouldn't because all physics calculations are done on the client side.
