Sure, there are exceptions. Some EV's have a separate final ratio, for either extra torque, or for launching.
Toyota is developing a manual for their EV's, however, gears are all simulated. Google Toyota manual EV.
I'm oldschool too. I like my ICE engines and manual transmissions. But EV's are growing on me, at least in the game. They can be fun. A few of them with the right tune, can be ridiculous fast on a drag race. But that's where it ends.

Im not super up to date with the latest but the Volvo C30 Electric was connected to the standard auto trans. Not saying im an expert on the subject just wishing for a resonable debatte and manual EV cars added to FH5 :)
Modern diesel/petrol cars are the same fnucking space ships as an EV give me the VOLVO 240!! back ;)
And that's why we drive ICEs, IRL and in game. More fun. In every way. And better for the environment too, actually.

Yes, it's fun working through the gears and using the engine to slow the car down (downshifting). I have owned more manual transmission vehicles than auto.
Modern EVs don't require multiple gears to get all the power from them. The Porsche Taycan does have a 2spd; however. Instant torque off the line and no gear changes makes it more efficient and better performance (generally).
ICE-V conversions to EV generally keep the original transmission because otherwise, some custom engineering would be required that makes conversions extremely expensive.
So while your driving an EV in Forza, if they programmed the vehicle simulation properly, when you lift the accelerator, it should slow down quickly as if you were downshifting. It's not 100% the same, but similar.
It's just the characteristic of the technology.
Yes, Forza could setup the EVs to have a manual transmission, but then that wouldn't be very accurate.
As said Ev's don't need a gear box at all, think of it a bit like driving a Tamya RC car.
