Loads... but they all come around again via weekly playlists or can be bought from the auctionhouse. Even if you start now you can still collect all the cars that you've missed.

roughly 4 to 5 every month for 2 years, so yes, a lot. All cars return eventually in different events, except DeLorean for some reason.
Still, there's a ton of cars in autoshow, stories, unlockable by ingame cheevos, so there should be no shortage of cars to play with, and if you REALLY want a particular car, you can try stalking auction house. Just so you know, rare cars in AH can get VERY expensive for starting out player.

The AH is really odd when it comes to extremely rare cars. For instance, I have the Mini FE and jokingly started to list it for auction. The max auction price I can list it is 700k. No way I would auction it anyway, but definitely not for such a small amount. The only way to get the rarest cars is to bypass the in-game mechanics and negotiate via third party communication or wait for a blue moon when it comes around on a playlist.

the game has 27 seasons. For the sake of simplicity lets say that every season brings 4 "new" cars (most of them are re added from previous games). That means that there are 108 playlist cars. almost every car from the playlist costs 20 mil. That means that you'd have to grind 2160 million credits to get every single one. In my 430 hours of playtime I was able to get only 330 million credits.
Spare yourself from torture and just don't buy the game. Grinding for cars is pretty much the only thing it offers. Not to mention that the devs now started adding half assed dlcs every month that are not included in the 100$ premium edition of the game.

You still have plenty of time to get the Lucid Air and Lincoln Continental. You have less than a day to get the Plymouth Belvedere and Pontiac Trans-Am.

Take in mind that all playlist cars WILL eventually return and if they follow what FH4 did with backstage passes, you will have more than a few chances to get every car.
