Sorry, I should have mentioned that I own the game on the Xbox App. The forums for Xbox are populated by smooth-brained gerbils, so I posted here out of desperation.
Either way, I don't think there really is a way, I remember looking for FOV config files for FH4 when I had my 16.9 monitor, it just wasn't enough, especially inside the car. I got an Ultra wide now and its definitely better on a 21.9 monitor.

How did increasing your aspect ratio help you see more? The same small FOV would be spread over an even larger screen. The in-game camera should not be able to capture more in it's FOV because the output is going to a larger monitor, right?
For racing, I love ultra wide for racing, and even Diablo 3 its nice, can see so much more on a already pretty low locked FOV game.
If I were to change the res to 3440x1440 on a 16.9 monitor, you might be able to see more on the sides, but you'd get a fish eye sort of feel as everything would be squished even with a low FOV.

FOV for all cams are maxed out at the in game settings, which is the same as 16.9, but of course a wider resolution.
You can kinda see when doing wheel spins, I can still see on the sides, the wheel spin is the normal 16.9, but game is 21.9. This is at 3440x1440. Not all games scale properly and stretch the image out on a ultra wide, but most newer games are doing pretty good and Forza scales well.
