You focus in this game on the development of your coffee shop. You don't do it from a first-person perspective. You take care of many economic aspects - such as managing employees, ordering ingredients, and managing finances. There are many features related to the economy in the game :)
The economic approach has always been to extend beyond one store when 'tycoon' has been attached to the idea
'Tycoon' is a pretty generic game title and the genre is I guess are games that focus on business management / economics. This game takes a more micro view of this focusing on single shop levels. Don't think this is too unusual, plenty of tycoon do this (build your own zoo or amusement park or ski resort or whatever) while others involve building widespread empires and the like.

The first part here would be true after the 10 missions.
The second part, not so much: the Campaign has 10 missions / locations, so it's like you end up running 10 places worldwide. A chain.
However, the campaign itself states on mission 1: "you have the opportunity to *intern* at cafes around the world." So you really are just a worker/manager, not an owner of even a single café.
However, all 10 missions are varied enough in my opinion, and one can just imagine you own those places... After all, the game being called "Coffee Shop Intern" would be lame :D
On top of managing pizza restaurants like you do in this game, you deal with the police, gang, government, competitors etc. Hell you can even buy weapons illegally and go to a competitor shop during their closed hours to sabotage them and force them to close, driving customers to you! And of course on top of that, you can buy up real estate to open multiple restaurants.
Games like this don't get made anymore.
I agree. The idea of tycoon has been removed for a simpler version of 1. The game should have been called Espresso Cafe and not Espresso Tycoon.
