Running the game in a solo multiplayer session with myself stuck in a wall, I pressed tilde ~ to bring up console and then typed: ply_kill
That killed my character. I was then able to choose the respawn point outside of the dungeon, saved, and lastly had the two other co-op partners join the game.
We did run into an unrelated issue about 30min later where we got softlocked at the Brisk Observatory with the Griffin not responding and the only other character there telling us to come back later. I restored the stuck in wall save (had located the save earlier and made a backup before doing ply_kill), used the console again to get out of there, and we'll just replay about 20min worth of the game next time we play.
Alternatively, I saw some console commands to give certain items to NPCs and complete quests as a way to get off the Observatory island but we were concerned about whether that disables achievements or causes progression / achievement issues later. I don't want to risk anything and replaying 20min is fine, so we won't try that at this time.
@Kaaz over on the official Discord for Hammerwatch 2 said with the most recent Sept 2023 game update mods and cheats are probably okay now as far as not affecting achievements.
Hammerwatch 2 cloud save files are located here (can vary based on the OS and how the computer is configured):

Though, my idea was to make the moving wall of spikes to have no collision, but that wouldn't make sense anyway, unless they changed the sprites.
