You might try one of the road grid options in Settings, either 2x2 or 3x3.
{sidenote, the selected layout seems to be shared between all towns, so if you extend a road from one town and run it perfectly straight, it will line up with the roads from other towns if any are in the way}
1. Original (modeled after original Transport Tycoon), which as you note is a mess.
2. Improved (a reworked version of the original, which reduces some of the clutter while still trying to make roads look more randomized).

As noted, you also have the option to disable towns from building roads. Many players like to enable this option and instead build their own road grids for the cities to build into. It looks ugly at first. Many players also use this option so that they can place building objects, design larger stations, etc and then lay their own roads around that.
