I'm new to the game, can someone please explain to me how the game works in the multiplayer function, from what I've observed when I leave the server, the company I open is closed, is that how the online game is?

The company isn't closed. It just sits there. And since no-one is maintaining it by replacing vehicles etc it will slowly start to lose money and go bankrupt. Also unmodded the game stops when it reaches year 2050(it takes about 22 hours to go from year 1950 to 2050) and most servers just restart from scratch at that point.

It depends on the server. Companies are not being closed the instant you leave but it's still probably not a good idea to leave for long. Because OpenTTD is limited to only 15 company slots, on popular public servers abandoned companies are cleaned up regularly to free space for new players.
