Perhaps the simplest solution is using OpenGFX+ Trains and OpenGFX+ Road Vehicles, as these basically give the default vehicles the ability to carry additional cargoes.
For ships, I can recommend FISH 2. Don't be fooled by the name, it's not fishing boats only, it's a general ship set.
And while we are on this matter, you can try the Aviators Aircraft Set or the WAS Airliners set if you want to transport fish by planes for some reason ;)
I tried to look for documentations on this mod and all I found are decades old wiki posts and dead links. I'm perhaps not looking at the right place.
Regarding other sets, there is no all-inclusive wiki page which lists all the sets with their features, although it would be quite the sight to see. But there are quite a few "best mods" compilations made by players, they've been linked to even from here.
All I want is to fully experience the mod.
Which version of FIRS do you have?
In FIRS, there are different economies you can choose from: https://grf.farm/firs/4.0.0/html/economies.html
The different economies have different sets of cargoes and industries. You can choose the economy by setting the parameters of FIRS, as described in step 3 here: https://wiki.openttd.org/en/Manual/NewGRF#activating-newgrfs
And why am I asking you for your FIRS version? In FIRS 4, none of the economies actually has 80+ industries. However, in FIRS 3, there used to be an economy called Extreme (see here: https://grf.farm/firs/3.0.0/html/economies.html), which is the biggest economy of them all, with 31 cargoes and 51 industries. So if you like going hardcore, use FIRS 3 and select the Extreme economy.
I will shill my own stuff here, you should look at trying out 2CC Trams and 2CC Cargo Trams. These can be useful to fill passenger and cargo routes where a road vehicle doesn't offer enough capacity and a train is overkill.
You may also like Road Hog, which is created by the same person who created FIRS and FISH. You may also enjoy another one of his works, the Iron Horse train set.
Guess that answers my question about the economies. Thanks for pointing that out. Might sound dumb but I didn't consider this to be a possibility.

About the Road Hog and Iron Horse, will it conflict with the OpenGFX+ vehicles?
When having multiple sets like this, I recommend having the setting Interface / Show the NewGRF's name in the build vehicle window enabled, I find it useful to know which NewGRF a particular vehicle belongs to.
By the way, there is this setting: Limitations / Vehicles never expire. It may come useful when just looking at NewGRFs for their vehicles. When I'm interested in a NewGRF, I just start a game at a ridiculous future date with this setting enabled, and then I can easily check all vehicles available.
