all the plants before just need seconds or minutes. with green they need x hours before you can (auto)harvest.
This is exactly how I run my farm as well. Currently on 3.4e25 fries.
I can imagine possibilities for better farming if you do a fair amount of micromanagement, but if you just want to leave it on auto for a few days then intuitively I think that is the best setup.
Perhaps if you wanted to optimize while still being mostly auto, you could swap out all your plants for the first plant once you get to maybe 75-85% of your run so you can really juice your final healthy potato production multiplier, and thus fries production, when your farm is at peak efficiency. If you stack tons of T7 plants when you only have a day left on a 3-5 day run, then how much are you really going to get out of it? Honestly farming most higher tier plants at that point is effectively useless because the bulk of their production has already been passed down the chain.
The only question really is what is the most efficient point at which to make that shift? On a 4-day run, is it at 75%? 90%? Perhaps there is a more optimum run duration. For me, once I can prestige for double the amount of fries as my all-time amount, then I do it, plus or minus adjustments based on available shop upgrades.

I feel like your strategy is fine early on, but since star levels double each time, that could quickly lead to intervals between reincarnation that would not be worth forgoing the boost gained from just doing a reincarnation and boosting your stats from fries/shop.
Personally, when I am getting close to doubling fries, I take a look at my star levels and see if anything is within range for upgrade, and then I focus on those plants before reincarnating. My range is generally when a plant only needs ~2-6 times its current experience to level up. Anything more than that and I just reincarnate and check it again the next time I get close to reincarnation.
I am pretty sure running one of each plant until you unlock your highest, switching to all 7's for a 12-24hrs (my goal was to get the easy plant level boosts), then back to 123456777 is the best combo. I also like to see how long it will take to level up each plant type, if i'm close i'll extend it a day or so to get around of levels but i think at some point it doesn't matter as much until you gain more grasshopper damage bonuses and such. But i have gotten lazy and just setup the 123456777 right away and just leave it because micromanaging the farm doesn't really help much in the long run. I'm running my farm for 3-5 days right now but generally see about a 2x indicator on the 3-4 day mark.
I am just breaking into the E25's but that really isn't a good indicator because the soul upgrades make a huge difference in starting points and ascensions can give a pretty large boost to speed that along with pets/extra soul upgrades. I have gone from ascension 5(6)? to 12 since farming was released.
Overall i think it's impossible to always have the "best" setup at all times as there seems to be a few roadblocks around unlocking assembly levels and grasshopper damage. Just do what you want as you will get there faster with higher ascensions anyways.
