That's exactly what I did, my rookies had 3k+ stats. Very grindy. I had wished there's another alternative like the money making mojyamon and then go restaurant method.

Have you tried the "mentor" method? That's probably not the name for the strat, but I found it relatively easy to de-sync the time of the partners so that one digimon is at least 1 stage above the other. If you have, for example, an elderly Mega-level and a fresh Rookie, spend that time to fight capped stats for the Rookie until they stop getting capped stats then moving on to the next zone. You end up with a Mega who has x stats and a Rookie who has the same stats. Keep training until the Mega dies and you usually end up ahead of your previous generation.
After that, your fresh mon trains in the gym until it reaches Rookie (the Rookie you had training with the Mega is probably Champion by now). After that, start training the new Rookie in the same method above until it's the same stats and once they're close, progress the game as much as possible. It's usually a moderate process that is mostly automatic. You don't have to do much beside tell the weaker trainee to defend over and over.
I've gone through the game until the end (not counting post-game) with 3 generations. So even though the grinding exists, it's not like you HAVE to do it a numerous amount of times...you could probably beat the game in 2 generations if you know what you're doing...maybe less. If you don't know what you're doing, it's a learning experience. I looked for a more efficient route and that could shift from focusing on gym training and restaurant food to wild battles supplemented with life-extension food and life transfer from the hospital. Overall, the tools exist in the world. Make it work for your style.

I have managed, luckily. Now at 4th gen with all achievements (reloaded previous save for digimon professor).
My rookies have 40k/40k/9,999. I find out that the most efficient way to grind is Seadramon mod ship 3.0, Orange WarGrowlmon Control Island, and finally Lucemon FM (dimension).

Sadly, I might not have the patience for the mentor method. Too tedious to raise 2 digimons to max stat in alternate ways. I am tired doing this for 4 generations. Don't mind my playtime in the profile. I often go offline so my brother can play MH World with his friends. My actual DW:NO time count is around 80-90 hours.
And actually, the restaurant is the answer I am looking for.
Now is trying to beat hard mode, in 1 generation (crazy goal but I'm a digimon fan after all)
