Rookies: 3 - 4 days.
Champions: Some time during seventh day.
Ultimates: Around 12th day.
As long you fulfill their key point need, you should be fine.
To rookie: About 12 hours after rebirth.
To champion: About 3-4 days after rookie.
To ultimate: About 3 days after champion if requirements are met.
To mega: About 4 days after ultimate if requirements are met.
If you're aiming for a digivolution that might take longer (I.E. care mistakes are required) then you can leave them at whatever stage after champion until you meet the requirements by blocking off the path.
From rookie to mega assuming you meet the requirements no issue and your partners are reborn at 06:00 then when they wake up after hitting age 4 they'll digivolve to champion, age 7 to ultimate and age 11 to mega. This is very consistent, however this version from what I can tell messes with the age timings some as well and they keep getting pushed back to 07:00 or 08:00 for age up. Honestly a benefit since you can sometimes feed them before they digivolve for more stats, or just start the day off with food.
