Ranger and Archer class i use Sharpening Oil.
2-Hand Sword to Fighter class with Perforating Oil.
2-Hand Hammer to Vanguard class with Sharpening.
Spearman use Sharpening too.
All of them use Legendary Weapon except 2-Hand Hammer, i prefer Rimsteel 2 hand hammer 3 star.
Till unstable oil is nerfed, the rest just look meh.
Makes all other oil look like gimping yourself :P
Witht he sharpening oil yes on archers since critting helps them add bleed to target. For the rest though I go with infectious oil since it does 1/2 the hit in damage to health. So you do a big hit and you can stack up some killer DOT. Imagine 200 dam crit and the oil procs that 00 damage to health at end of their turn. For most that spells their death. Infectious is also handy because its not poison so if you do it to an infected they dont get buffed. I tend to prefer doing damage and killing as many as fast as possible.
Unstable oil and bleeding oil are the most powerful oils in the game in terms of damage. But by the end of the game, if you have straight hands and you have created characters that one-shot opponents, then the simplest oils will do: Perforating Oil and Sharpness oil giving 10% to critical damage, oils with the DLC Pits, increasing damage by 50% on bleeding, burning and poisoned targets. Simple, but effective.
I have a fist fighter with a bleeding oil for killing the boss. That's all I need to kill any boss with one Feat skill. The rest of the group is focused on killing the maximum number of targets with AoE attacks.

The Brave Oil: Gain 1 VP whenever you use a valor skill
Perforating Oil: Ignores 50% Guard (= 10-40% extra damage)
Pugilist and multi hitting characters:
Bleeding Oil: 50% chance to remove 25% (10% against bosses) max hp on hit
