Go level up your brewer first, and when you are max out on your brewer go capture tons of prisoners make them cooks/thieves/bard, and recruit them, then start a tavern and you can sail to MAX level in no time.
So funny a DLC where you are better off without the DLC for everything, and then buy it.

Hmm. Sounds a bit disappointing if I can max level in no time and get an "instant win" because I'm not looking to sail through extreme difficulty with the DLC.
You can convert the tavern income to "real" money but it decreases the conversion rate everytime you do it without . So 100 copper (tavern money) will give you 100 crowns. Then only 80 crowns, then 70 etc.
This recovers back up if you don't do it for a while.
It has saved me when I forgot to keep enough money on hand for group payday once or twice. :)
You don't need to exchange all the coppers every rest. just let it pile up and then once in a while harvest everything. same way the Company Flag buffs work.
That is all to it. so once you max out the tavern, you can forget about economy for a long time. just do the rest clicking of food swap (even then some food source stay stable)
It isn't even needed really the extra income, there isn't anything to buy at the endgame.
best gear in slot is farmed, second best gear is crafted.
