The horse disappeared in the 10th minute of the new game
I started a new game, took the first contract in the tavern, completed it, and helped a merchant caravan fend off bandits along the way. When heading to the city, I ran out of stamina and walked a bit after it was depleted. Upon arriving in the town, I discovered that my horse had disappeared.
Is this a game mechanic or a bug?

You can't move when your fatigue bar is over. Your horse died from fatigue. Reload to an earlier save and be more careful.

Also was your horse a warhorse? If so did it die in combat and you missed it?

Likely your horse kicked the bucket from you pushing the company after their fatigue ran out.
