Unstable is good. I put brave oil on it first time I got it and I learned it doesn't exactly work as I thought it would. I don't remember exactly how but try it out and see how it works for you.

It should only apply "on-hit" effects. So Unstable Oil should always be considered. Most everything else is build dependent, like Bleeding Oil. Simple Sharpening Oil for Crit is reasonable, same with the attribute enhancers (Strength Oil?).

I use Unstable oil and perforating oil to ignore the guard, it works well with a berserker build

Same oils, but I use it on my Sentinel and have a secondary weapon with Brave Oil and Shielding/Hardening? the oil that gives in position to double guard for buffing my party.

Depends on what you want to achieve. If the attack (sequence) is going to outright kill the target anyway, oils that deal delayed damge are fairly useless, for instance. If you want to set the target up with extra damage from a different source (e.g. 25% extra damage to poisoned targets), poison would make sense. Same with fire.

Bottom line, think about the context and you should logically be able to figure out what works best for you in said context.
