For example, I've just started, have a party of 5, three with professions (thief, tinkerer, blacksmith) and two unassigned.
My tinkerer just built a cooking pot, unlocking the cook profession, so as I test, I save the game, then open up the cooking craft menu by right clicking the cooking pot.
It asks me to select a cook - but the only options that are not redded out are the two characters with no professions, I can't select someone with an existing profession.
So, this tells me I must be going about this the wrong way. Is there another page I can assign professions from that I need to be on? In the past, I've always done it from the crafting page, but clearly there's something else I'm missing...
edit: Ah-HA! Following that logic, I looked around on the character screen and found your can assign professions there, including changing your current profession - that's what I'm looking for!
If you right click unassigned one it will open up selection menu right away.
if you guard them to the maximum level, they will NEVER escape. therefore, prisoners are absolutely ideal for practicing professions
