Remember, Time = Pay, Fatigue = food.
Fatigue does build up faster per second while running than while walking. But you also cover more ground while running. So the question is which makes fatigue build up faster for the same distance covered? That's not so clear to me, and it seems to depend on a lot of factors. Running on roads seems much more worth it than running in forests.
But I haven't bothered to rerun the experiment now 'cos a) the difference was marginal and b) I haven't got the patience to walk anyway.
The actual reason for having running in the game is to enable you to escape bad from stuff you are frightened of, not so you can travel further per rest.
As a side question: do the movement bonuses from ponies (both skills and horse shoes) stack?
