But I have not tested this since early access.
It's hard to level up profession in the game. The game forces you to have multiple human companion. You can even use prisoners as your gatherers.
All 10 professions are necessary.
But their importance, and I mean importance by: Can live using it or without using it constantly, ranging from 1 to 3, while 1 is more important, 2 medium, 3 less important.
1 - Blacksmith - Assign this profession to a Strength based character, focused on damage.
1 - Miner - Assign this profession to a character which you want to be more Tankier (have more life).
1 - Thief - Assign this profession to a character which uses Dexterity as main attribute, such as Ranger or Archer.
1 - Tinker - A little bit free to assign. It increases %Crit Bonus, which, all characters can benefit.
1 - Cook - Assign this profession to a character which you want to be more Tankier (have more life).
2 - Angler - Good to assign this profession to a character which have low willpower.
2 - Scholar - Assign this profession to a character which have low willpower.
2 - Alchemist - Assign this profession to a character which benefits from Dexterity.
3 - Woodcutter - Assign this profession to a character which benefits from Strength.
3 - Bard - You wont use this profession until later in the game. Quite later indeed, sadly. But you will eventually unlock it your first region, Tiltren.
Disclaimer: Thats only my opinion and not facts. It varies from player to player.
i ment more or less what they are good for when using them, not what they "are good for in stats that is given" to the caracter because that is already stated in game kind sir.
though i cant have 10 people in my group im guessing having all of them even though as you state indeed all of them is good for something, would like to know wich ones are the best.
I thought I made It clear since I ranked them . For "What they do exatcly" its self-explanatory. Are you reading the tool-tips in-game?

so that profession does Nothing to you but giving you points in will power?.
you cant use it for anything special like you do with a blacksmith or tinkeler? :)
and,, if my caracter that is a lvl 5 tinkeler dies. i have to restart from the beginning to lvl up another one?.
or i will just lose the xp i gained towards the next lvl, the same as if i shifted to another profession and back.
cause would suck if i have like 5 party members and i want another one that is way better, but then i have to start at blacksmith lvl 1 again before i can make good stuff. or if it dies.. dont want to load over and over to keep everyone alive all the time.

If you dont mind, I would advise reading after you unlock something new. So you wont spoil your adventure. But, that's up to how you enjoy yourself.

Given that there are 10 jobs, I'd say that 10 mercs is a nice round number to aim for in your party if you want to experience the whole game. The different stats bonuses also encourage a mix of 2 archers/rangers (DEX), 5 of any of the others (STR/CON), and 3 up to you.
In terms of the usefulness of the jobs themselves, here is my breakdown:
Bard and Angler are, I would say, the most optional. They can each gather different types of resources, but there's little to no content that actually requires them. Furthermore, you never actually need fish, and there are plenty of other ways to get gold and influence.
Blacksmith and Alchemist are nice for making your own stuff. Blacksmith particularly, crafting your own armour with slots of layers leads to much better kit than you can loot. The alchemist synergies well with that because it makes the refined metals for high level gear. Also oils significantly improve weapons. The rest of what it does is ok, but not so important.
Some areas are walled off behind an action that requires a Miner or Wood Cutter, so these are kind of necessary for some quests. Beyond that, miner is far more important because there are lots of other ways of getting wood, not so much for ores. Without a miner, a blacksmith is mostly useless. Similarly is the Scholar, which is both needed to progress through tombs, and to get something of value out of what you loot from there.
Tinkerer and Cook are pretty much necessary to make the survival parts of the game, well, survivable. Tinkerer will make your camp vastly better (including being able to use a cook!) and make you lots of handy items. The Cook both reduces how much food you'll consume and lets your food go further by cooking it.
Thief is probably the single most important profession, locks need to picked left-right-and-center, and stealing recipes is by far the easiest way of acquiring them (and because you consume them, there's no need to launder them before selling them).

exactly what i was curious about..
But what happens if my lets say lvl 5 trinkeler dies?..
if i make another one trinkeler.. will i remain at lvl 5? or i have to grind that up all over again?
fisher and woodcutter (and miner) are basically free resources whenever you get to a mine, a pond or a camp with a woodcutting block - not that important but ressource management is a big part of the game so without those you gonna have a harder time
thiefs are the only ones who can open locked chests and those rewards can vary from mediocre (ressources) to very strong (weapons, knowledge points, belt/ backpack trinkets)
here are the last 4 roles ranked for me
cook (makes starving much harder) > alchemist (crafting oil and metals for the blacksmith) >= blacksmith (crafted gear can be a good boost but get outshined later on >>>>>>>>>>>>>>>>>>> bard (in almost 150 hours I still havent found use for them outside the tombs and you could use a prisoner here or switch someones job for that moment)
so in summary you could work with the starting 4 people (sholar, tinkerer, thief and miner) and just buy everything else like cooked meals at the tavern, medicine in town and gear from wandering traders

Yes, profession level is linked to an individual, so if they die you lose the progress. But by the time you're at a high level in a profession, having a merc dying just shouldn't be an issue.
As a note, levelling up Blacksmith, Alchemist, and Miner actually enables them to do new things. For all the others, it just makes them a bit better at their job, but not in a crucial way.

so everything ive unlocked that in can do with a set profession is Reseted to everything being locked?.. if i make another black smith , he will not be able to make high lvl armor for me untill i lvl him up from the beginning? that sounds very puneshing.. to restart 100% from scratch to unlock stuff to build and make.
