Remove or cancel a profession?

so i gave the same profession to 2 of my companions but cant remove it from the other is there a hot key or a shift & click something im missing? i only need tinkerer on 1 companion

Assign them a different profession. I don't think you can just remove it.

is it important to set professions early or is not that important till later on mid-late game?

Depends on the profession, but for the most part you want to assign it as early as possible and not changed it until they reach master level.

Make sure you pay attention to the specific bonuses provided by each profession. :)
