This is not an option to begin the game - it is, however, easy enough to kill off a merc or two and simply get a couple others that you want at the tavern - knowing of course you can get a free Warrior (Torus) in Tiltren, as well as a Ranger (Hakert) in Tiltren as well.
No need to kill off anyone. You can just release/dismiss prisoners and troop members. To do so, go into the character screen of a troop member, click on the gear icon in the bottom center, Dismiss is highlighted red.
JFC, gamers these days. It aint that f0cking hard to read UI's.
There are no plans to add a custom start to the game at this moment in time.

If there's no official way (and I understand why there wouldn't be for general balance), is there a mod or a way of editing save files? I know my way around a .json or .xml, but a quick rummage through the steam folder didn't help me. What looked to be a save file was in hex which I obviously can't edit without more tools.
that's why you just let them die - but do it AFTER you've got a good amount of influence and krowns - if anything it affords you the opportunity to play test different classes - and - truth be offered (FWIW) all the classes have worthy strengths - and i've not seen any way to edit the files.
just to have a start with my preferences, or if i just wanna go wild, like all archers, capture wolves and go all ranger roleplay or something :P
Yeah, I could do that, but then my new recruits are behind in experience/level and I'm having to get rid of some of the most powerful fighters. Not to mention that it goes against the whole RP experience I want to have. Mind you, I know what I'm doing is not optimal strategically, but that's not what I'm wanting to do here!
Is there no modding / savefile editing at all in this game?

There's no easy solution at the moment. But I have a couple ideas you can try-
1) Start off with the "Farmers" option to get 2 pike users straight off the bat.
2) Select the scaling option instead of Region Locked so the enemy force matches your group better.
OK, I would propose that you do the game in 2 phases. Run a beginner team to execute a setup, then recruit and train your chosen elite unit, dismissing/retiring the the originals if needed.
Setup:
You need to acquire money, a food stockpile, and the Training Dummy from Vertruse Arena fight. To get the stockpile, use any stash in game to keep your spare items/food. One good spot is the little stash north of the Tildren Stables. Another is the one just South of the Tildren-Vertruse Border gate.
I would suggest( this is a little weird, I know) that you use the Farmers to farm in the beginning. Consider them the "Fathers" of your planned team. Use rope from the Jail to capture some boars, once your guys are past level 3, and upgrade those boars to Livestock.

Run the farm in a few cycles till you have a goodly supply of raw pork, leather, and grease, which you can bank in the stash. Trading Goods runs can massively increase your wealth, and you can drop off a couple men during this phase to save food and money. Train one Piker as a cook, you'll use him for the next phase. Scour the taverns and jails to get replacement Pikemen.
Once you have the group composition, you can then get to the training phase.
Win the Arena Fight in Vertruse, and acquire the Training Dummy plans. You can then camp near the stash, and simply repeat rests with one recruit on the dummy, and the cook stationed near the pot to rapidly levelup the Recruits.
You can build EXACTLY the team you want, funded by the efforts of the Fathers.
unfortunately the devs haven't understood it yet or too busy listening to the minority of players who complain about a lack of content after sanding the game

But there is no such option, only to look for random people in the tarverns, it is very frustrating, I want to play who I create.

beside they said there will be new starting member set involving pugilist
maybe they will give us some freedom to choose starting members
probably not, cuz devs team is not known for caring minor QOL features
but maybe my friend, maybe.
