Also, in addition to the above comment, they are great for triggering other abilities. Sword Master can use it to count as an attack towards the Lacerate ability. Ranger can use it to proc throwing knife ability, and so on. So, whilst it is single use, you can get a lot of mileage out of them.
Throwing axes use STR as their base stat, and the knives use DEX. If you are looking at giving them a try, they work better in the right hands.
It's possible to equip them the wrong way simply for the benefit to stats-

eg: Throwing Knife gives more crit hit, so it could be equipped on a STR based merc who needs/wants more Crit Hit %, and just carried around( not thrown) as a "stat stick" - this person ought to be the Tinker, obviously.

I gave my only rogue the ogre throwing dagger from an early quest that gives 20 dexterity and can be thrown 3 times at 3 different enemies within 4 meters. I put a throwing ax in her other off hand. She has great movement distance as well as run, so I move her into a pack of 3 enemies have her throw her 3 daggers, then have her throw her ax, which triggers 3 more dagger throws, and sometimes I go in for the kill with another ability and it triggers 1-3 more throws, or I just run past and stop near another enemy and it triggers another 1-3 dagger throws. It is awesome (and maybe a bug, lol), but she can singlehandedly wound or kill 3-4 enemies per turn and then run away out of their range, and then do it all over again the next turn. She is awesome, I am in love.

I primarily carry them around for the stat buff, *maybe* use them if a super low HP enemy is about to hit an ally. You definitely want something in the off-hand for Rangers. I also tried a 1H Axe Warrior/Executioner with a dagger in the off hand. Not terrible, but I screwed up the build some.

Yep, definitely a bug. I got it right when the weekly q started and that dagger didn't have the range limiter. You could use it to toss daggers across the entire map.

Is there no way to restock them after a fight? I just found a throwing poison knife that’s a great off-hand for my poison guy. But it has no uses left.
@Kenny, you can craft more throwing knives. Make a stack of them and they will auto-replenish after battles until used up, then make another stack. You need to collect or buy the ingredients.

Keep in mind that normal throwing items require a Blacksmith using a forge.

For poisoned versions, you first need a normal version (probably through Blacksmith/forge) but then you need an Alchemist to add the poison at an apothecary or other work station.
