Downside to Cannibalism Knowledge?

I can't find anything in game speaking of the negative effects of the skill, and online I can't find anything either. Can anyone help or tell me your experience?

no downside per se. Just that bodies weigh 10 weight units a piece and only give one food a piece. Good if you just killed some humans and need to rest after battle, take the bodies and use as a complement to use less of the more efficient food. Coupled with miscellaneous tanning and like ten or twelve ponies with saddlebags and work pony skill, you can carry quite a few bodies around for tanning into leather (not very efficient either but one leather is one leather) and just eat them when the encumbrance gets too much. I'll usually always have at least 2 carcasses on the meat drying rack and one corpse on the tanning rack just for the resources per rest.
With how the game functions currently, cannibalism is mostly a wasted knowledge point (nothing I can do about it now though) so I'd suggest just using the kp elsewhere and getting it amongst the last things you use kp on in the game
