The Elite Abilities are the ones which are seen as the best of the best. Route Technician and Acrobat are two abilities on both sides of the ball which can be game changers.
On the defensive side, some other good ones:
Inside Stuff
Under Pressure (but depends on what the opposing QB has as abilities)
Pick Artist
Deep Route KO
Offense, some other good ones that are not Elite:
Fearless
Omaha
Double Me
Protected
In "regular" Madden. You can adjust your abilities per game. So you should look at your opposing team, see what they have and pick abilities that can either counter or give you an edge. Sometimes your typical abilities may be countered by your up coming opponents abilities.
It's a bit of a chess match so just try a few out...

Just one grinding MUT title put me off of that mode forever.
Honestly I wish they brought back coop. Some of my fondest memories of early 2000's Madden was playing with my friend on the same franchise team. Taking turns lead blocking with lineman and either one of us played RB, running custom routes while the other passed, playing a rusher while the other was in the secondary, etc. Good times.
