The push gente itself, it seems. Just by pressing the gentle push button (and keeping it pressed), Altair should automatically avoid hitting people by pushing them gently when they are near him. You don't need to press the button for every hit you want to avoid or anything, just keeping the button pressed and you will never break a jar even if you move a lot.
The behaviour of the right hand button (B/shift) depends on which profile you're on: low or high, and this is told on the tutorial. On low profile, it avoids people, on high profile, it grabs them.
These are the exact words (but with prompts for both keyboard and controller) used on the tutorial:
"Press and hold B" vs "Press and hold RT and press B", the tutorial explains exactly what you have to do, I don't see how there's anything wrong with it.
