best way to tackle boss on with horse?

I've basically died when he's about 2-3 hits away unfortunately, is it much easier to coop it?

Memorize his attack patterns, dodge them, and hit him. Repeat. Unfortunately, there's no secret sauce to killing him - it all boils down to having knowledge of his attack patterns.

What kind of weapon are you using?

He doesn't have very high poise. If you're battering him with a grand sword or similar large weapon held in both hands, it's very easy to stagger him repeatedly.

Even more so if you've taken the Iron Wayfarer as an NPC supporter.

Thank you, I am unsure how to do coop so I added you in the interim

You can knock him off his horse with parry/ranged attacks or by popping the umbral things covering the arena. You can also use them to stagger him when he's not on the horse.

Aside from that just learn his patterns, dodge, punish. Also upgrade your weapons as much as you can and use salts. He is weak to burn and bleed.
