2 player co-op lame.
Third guy can invade and stick around long as possible but like .. just bad choice to limit it to 2 player co-op.

It would be way too easy with 3.

There is no good reason for any RPG to not have a 4 player co-op minimum.

Scaling difficulty. Like almost every game under the sun has used to compensate.
The game just needs to remove the butterfly walls during invasions, and the co-op player tether (at least, for the entirety of the location players are in). If those, two tweaks were implemented, players could just run to a Vestige to end an unwanted invasion -- at the obvious trade-off enemy re-spawns.

Currently, invasions are like plonking an ad hoc corral around players (in part, perhaps why tethering exists), which often disallows access to a Vestige, as well as can create an unfavourable environment for PvP.

I’m not against more coop players being able to play together . It wouldn’t affect my game at all . But as far as I know most souls likes only allow 2 player coop

Actually there are quite a few reasons, besides balancing, stat build up, connectivity, etc.

Just more health and damage dont compensate for dumb AI that already dont know how to deal with 2 targets at once let alone 3 or 4 and those party multiplayer gamer (party of 3, 4 or more) are games with hyper inflated bosses that throw AoEs nonstop and all around being a matter of items management and stats only, what is not the case of a souls like neither ever should become (or else it is not a souls like anymore).
