Unless the thumbstick needs to be fully in a given direction rather than only partially?
Personally I got in a habit of just locking and unlocking constantly during boss fights so I can use the unlock roll, but its probably easier to just double tap dodge.
As for which is better, like most of these games, it depends on the attack. Some you can parry/block and then still get hit with the follow up, some will just blast through your block, some are difficult to dodge and easy to parry, etc.
99% of the time my character rolls. and yes I tilt my thumbstick to the max unless I'm trying to walk. but why would I be walking when I'm in a middle of a fight
You're talking about the difference between tapping dodge alone, or combined with a direction, while unlocked. OP's issue is with unlcock vs lock dodging mechanics.
I guess I'll have to try and get good at unlocked combat because I truly hate the side step 😂
