Any missables if I play offline?

I generally do an offline first playthrough.
I've read that if I do that here I would be starved for coins and other things. Note that I haven't played the game yet and please refrain from spoilers

Would I miss out on any online-only quests/items/bosses?
Another way to ask would be... Are the things I'd miss out few and not so useful, similarly to the covenant rewards in Dark Souls 3? In DS3 you could get those items from certain enemies but the drop rate was incredibly low.

Is there a mod to increase the amount of these items if I still want to play offline?

only some armour pieces, consumables(you can get them anywhere) and some tincts other than that you wouldnt miss out on anything

There are only two trophies to earn online:
1. Win 1 match in PVP
2. Donate 10 x type of online currencies to the altars (Hands, Coins and Eyes).

Apart from this, if you play offline you obviously won't be able to play co-op with friends... but you won't have invasions.

Those armors don't count towards the armor trophy, but I haven't farmed them so I don't know what stats they have.

The only shrine item that really matters is the Deralium Chunk for 150 pilfered coins. You only have a set amount of them to find each playthrough, so if you want to upgrade more weapons to max, you either need to do another NG+ cycle or buy one at the shrine.

The Coop Armor has really good physical/Holy Defenses and looks in my opinion dope. But there are other good Armors with similar Resistances.
Adyr and Bone Torso? Crap. And Ugly. Underwhelming Resistances.
